Put yourself in a position for the day with this solid veggie breakfast with eggs, avocado and dark beans. All that's needed is 10 minutes to put together and makes an extraordinary lunch, as well

Cooking Ingredients

    2 tsp rapeseed oil
    1 red stew, deseeded and daintily cut
    1 huge garlic clove, cut
    2 huge eggs
    400g can dark beans
    ½ x 400g can cherry tomatoes
    ¼ tsp cumin seeds
    1 little avocado, split and cut
    small bunch new, cleaved coriander
    1 lime, cut into wedges

Cooking Direction

    Stage 1
    Heat the oil in a huge non-stick griddle. Add the stew and garlic and cook until relaxed and beginning to variety. Break in the eggs on one or the other side of the dish. When they begin to set, spoon the beans (with their juice) and the tomatoes around the skillet and sprinkle over the cumin seeds. You're planning to warm the beans and tomatoes as opposed to cook them.

    Stage 2
    Eliminate the dish from the intensity and dissipate over the avocado and coriander. Press over portion of the lime wedges. Present with the leftover wedges as an afterthought for crushing over.
