Crispy Cod Sandwich

This recipe for baked fish sandwiches is nutritious and retains all the crisp without frying. The baked cod is made to be crispy on both sides thanks to the wire rack.

Cooking Ingredients

    • 1 large egg white

    • 2 ¼ cups cornflakes, crushed

    • 1 pound cod, cut into 4 pieces

    • 1 teaspoon garlic powder

    • ½ teaspoon ground pepper

    • ¼ teaspoon salt

    • Olive oil cooking spray

    • ⅓ cup mayonnaise

    • 2 tablespoons dill pickle relish

    • 4 whole-wheat hamburger buns

    • Lettuce, carrots, cucumbers, radishes, cabbage, bell peppers and/or tomatoes for serving

Cooking Direction

    1. Set oven temperature to 425°F. Spread foil on a baking sheet, set a wire rack on it, and spray with cooking spray.
    2. In a shallow dish, whisk the egg white until foamy. Cornflakes should be put in another shallow dish. Add salt, pepper, and garlic powder to the cod. Coat the fish with cornflakes, pressing to ensure they stick, then dredging it in egg white and shaking off any excess. Arrange on the ready-made rack. Apply cooking spray to the fish's sides and top.
    3. Fish should be baked for 15 to 20 minutes, or until it turns golden brown and an instant-read thermometer put into the thickest part registers 145 degrees Fahrenheit.
    4. In a small bowl, mix relish and mayonnaise. Along with some of the sauce and veggies, place the fish on buns.
