Have your cake and eat it with this wonderful low-fat, sound banana portion - ideal for breakfast and then some
low-fat spread, for the tin, in addition to extra to serve
140g wholemeal flour
100g self-raising flour
1 tsp bicarbonate of pop
1 tsp baking powder
300g crushed banana from overripe dark bananas
4 tbsp agave syrup
3 huge eggs, beaten with a fork
150ml pot low-fat regular yogurt
25g slashed walnut or pecans (discretionary)
Stage 1
Heat broiler to 160C/140C fan/gas 3. Oil and line a 2lb portion tin with baking material (permit it to come 2cm above top of tin). Blend the flours, bicarb, baking powder and a spot of salt in a huge bowl.
Stage 2
Blend the bananas, syrup, eggs and yogurt. Immediately mix into dry fixings, then tenderly scratch into the tin and disperse with nuts, if utilizing. Heat for 1 hr 10 mins-1 hr 15 mins or until a stick tells the truth.
Stage 3
Cool in tin on a wire rack. Eat warm or at room temperature, with low-fat spread.
