One that fathers will adore! This any-time feast is wonderful with an aiding of heated beans

Cooking Ingredients

    500g potatoes, diced
    2 shallots, cut
    1 tbsp olive oil
    2 tsp dried squashed oregano or 1 tsp new leaves
    200g little mushroom
    4 eggs

Cooking Direction

    Stage 1
    Heat stove to 200C/fan 180C/gas 6. Tip the potatoes and shallots into a huge, non-stick broiling tin, shower with the oil, sprinkle over the oregano, then combine everything as one well. Heat for 40-45 mins (or until beginning to go brown), add the mushrooms, then cook for a further 10 mins until the potatoes are carmelized and delicate.

    Stage 2
    Make four holes in the vegetables and break an egg into each space. Get back to the broiler for 3-4 mins or until the eggs are cooked however you would prefer
