These simple solid flapjacks get their soft surface from whipped egg whites. Stack them high with new berries and a spoonful of low-fat yogurt
50g self-raising flour
50g wholemeal or wholegrain flour
2 little eggs, isolated
150ml skimmed milk
berries and low-fat yogurt or fromage frais to serve
Stage 1
Filter the flours into a bowl or wide container and tip any pieces in the strainer back into the bowl. Add the egg yolks and a sprinkle of milk then, at that point, mix to a thick glue. Add the leftover milk a little at a time so you don't make bumps in the hitter.
