Lemon-Garlic Baked Cod

The vibrant tastes of lemon and garlic meld to create a buttery, flaky baked cod that is incredibly simple to prepare. A dash of fresh parsley gives a crisp flavor.

Cooking Ingredients

    • 1 lemon

    • 4 (5 ounce) cod fillets (about 1 inch thick)

    • ½ teaspoon salt

    • ¼ teaspoon ground pepper

    • ¼ teaspoon garlic powder

    • 2 cloves garlic, grated

    • ¼ cup extra-virgin olive oil

    • 1 tablespoon chopped fresh parsley

Cooking Direction

    1. Turn the oven on to 400°F. Cut the lemon into 8 thin rounds and squeeze the leftover juice into a 2-quart baking dish.
    2. Using paper towels, thoroughly pat the fish dry, then season it all over with salt, pepper, and garlic powder. Spread the fish evenly in the baking dish and top with the garlic. Oil should pool in the baking dish after being drizzled over the fish. Put two rounds of lemon on top of every fish fillet. Bake for 25 to 30 minutes, or until the fish is cooked through and flakes readily with a fork. Add a little parsley on top.
