Lemon-Garlic Grilled Cod

This lemon-garlic grilled cod features charred lemon and garlic oil that adds an extra dimension to the moist and flaky fish.

Cooking Ingredients

    • ⅓ cup grapeseed or avocado oil

    • 6 cloves garlic, grated

    • ½ teaspoon salt

    • ¼ teaspoon ground pepper

    • 4 (5 ounce) cod fillets (about 1 inch thick)

    • 2 lemons, halved crosswise

    • 1 tablespoon chopped fresh chives

Cooking Direction

    1. Turn the grill on high. Combine oil, garlic, salt, and pepper in a small bowl and whisk to mix. Fish should be well dried with paper towels before being put on a baking sheet. Make sure to retain the leftover garlic oil and brush both sides of the fish with about 1/4 cup of it. As the grill heats up, leave the fish on it.
    2. After the grill is ready, give the grill rack a good oiling (see Tip). Lay the cut sides of the lemon halves down on the rack. Grill the lemons, uncovered, for about 4 minutes, or until the sliced sides are nicely browned. Move to a platter for serving.
    3. Put the fish in a grill basket in the interim. Put the basket straight onto the rack and cook for four minutes. Brush the fish with the remaining garlic oil without turning it. Grill the fish for a further two to four minutes, or until it is cooked through and a thermometer inserted in the thickest part registers 145°F. (The fish should come free of the basket; it should have an opaque top and somewhat flaky edges.) Place the fish and lemons on the platter. Drizzle the fish with lemon juice and garnish with chives.
