Get four of your five-a-day with this solid serving of mixed greens of mango, avocado and beans. It's a nourishing stalwart that is likewise vegetarian and gluten free
1 lime, zested and squeezed
1 little mango, stoned, stripped and slashed
1 little avocado, stoned, stripped and slashed
100g cherry tomatoes, split
1 red bean stew, deseeded and hacked
1 red onion, slashed
½ little pack coriander, slashed
400g can dark beans, depleted and flushed
Stage 1
Put the lime zing and juice, mango, avocado, tomatoes, stew and onion in a bowl, mix through the coriander and beans.
