Spicy fish taco bowls with mango pico

Fish taco bowls are a creative twist on the classic fish taco! With sweet and spicy mango pico de gallo and delicate baked fish, these delectable bowls are a flavour explosion. You won't be able to stop eating until you sprinkle some chipotle crema over everything.

Cooking Ingredients

    • 1  pound wild caught cod
    • 2 tablespoons grapeseed oil
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon cayenne pepper
    • 4 to 6 cups shredded napa cabbage
    • 1 jalapeno pepper sliced
    • 1 avocado thinly sliced
    • 1 cup cherry tomatoes quartered
    • 1/3 cup fresh cilantro
    • 1/3  cup queso fresco cheese
    • 2 tablespoons diced red onion
    • 1 lime cut into wedges for spritzing

    MANGO PICO

    • 1 mango diced
    • 1/2 cup cherry tomatoes quartered or diced
    • 1 jalapeño pepper seeded and diced
    • 3 tablespoons sweet onion diced
    • 3 tablespoons chopped fresh cilantro
    • 1 lime juiced
    • salt and pepper to taste

    CHIPOTLE CREMA

    • 1/2 cup plain greek yogurt or sour cream
    • 3 tablespoons half and half
    • 1 chipotle pepper in adobo
    • 1 tablespoon adobo sauce from a can of chipotles
    • 1 lime juiced

Cooking Direction

     

    1. Set the oven rack approximately 6 inches below the grill and preheat the grill to high.
    2. After putting the fish on a baking pan, drizzle it with grapeseed oil. Combine the paprika, cayenne, garlic, salt, and pepper in a bowl. Evenly sprinkle it on top of the cod, then gently press it in place to ensure it sticks.
    3. Use a fork to pierce the cod and broil it for 6 to 8 minutes, or until it's partially opaque.
    4. Shredded napa cabbage should be added to the bottom of a bowl and seasoned with salt and pepper before assembling the bowls. Add the mango pico, tomatoes, red onion, avocado, cilantro, jalepeño slices, and queso fresco cheese on top. Of course, you can use as much as you like—the topping amounts I listed above are merely personal preferences!
    5. Pour chipotle crema over the whole thing and give it a lime spritz. Present!

    MANGO PICO

    1. In a large bowl, combine all the ingredients and swirl to mix. Give it a half hour or so to develop the flavour.

    CREMA CHIPOTLE

    1. Combine all items and whisk until well blended. Allow it come to room temperature while you get the bowls ready! To preserve any leftovers, keep refrigerated.
