This good veggie lover salad is 4 of your 5-a-day, plentiful in folate, fiber and L-ascorbic acid, in addition to it has heaps of fascinating flavors and surfaces
600g yams, cut into even pieces
2 tbsp additional virgin olive oil
1 tsp stew drops
400g can dark beans, depleted and washed
198g can sweetcorn, depleted and washed
2 avocados, cleaved
250g tomatoes, cut into pieces
1 little red onion, daintily cut
1 little pack coriander, generally cleaved
juice 1 lime
Stage 1
Heat stove to 200C/180C fan/gas 6. On a baking plate, throw the yam in 1 tbsp of the oil with the stew pieces, ocean salt and pepper. Broil for 30 mins until delicate.
Stage 2
When the yam is almost prepared, consolidate the leftover fixings in an enormous bowl with the excess 1 tbsp oil and season well. Blend all that well however take care to try not to crush the avocado. Partition the serving of mixed greens uniformly between plates, or serve imparting style to the yam lumps.
