Turkey burger with sweet potato wedges

This sound turkey burger recipe makes a simple feast for two. Take a stab at presenting with dynamic green veg and yam wedges for a filling supper

Cooking Ingredients

    • 1 yam (around 190g), cut into wedges
    • 260g turkey bosom mince (under 5% fat)
    • 1 red onion, diced
    • 2 garlic clove, ground
    • 1 egg, beaten
    • 1 apple (around 70g), stripped and coarsely ground
    • 1 tbsp dried oregano
    • 1 tbsp paprika
    • 15g coconut oil, dissolved
    • 135g green vegetables (spinach, kale, broccoli, mangetout or green beans)

Cooking Direction

    Technique
    Stage 1
    Heat broiler to 180C/160C fan/gas 4. Destroy the yam wedges in the microwave for around 6 mins on full power until simply turning delicate. Pass on to rest for 30 secs.

    Stage 2
    While the yam is turning in the microwave, blend the mince in a bowl in with the onion, garlic, egg and apple. Stall your hands out in and work the fixings along with a decent spot of salt and pepper, the oregano and paprika. Shape the combination into two burgers around 3cm thick. Put on a lined baking plate in the broiler for 20-25 mins, turning part of the way through cooking, until cooked through.

    Stage 3
    Heat the coconut oil in a huge skillet over a high intensity. Add the yam wedges and shallow-fry for around 3 mins each side until they are well sautéed everywhere and cooked through to the middle. (On the other hand, throw in the oil and meal in the broiler for 15-20 mins.) Channel on kitchen paper, then, at that point, season with a decent touch of salt.

    Stage 4
    Serve the burgers with the yam wedges and a piece of green veg either steamed, whitened or bubbled.
